If you have spent the morning at Ski Santa Fe, plan on getting back to town in time (by 3 p.m.) to enjoy the goodies at Mille, a classic French café that opened in January. Along with all the delicacies that chef Marcel Remillieux sculpts out of his homemade puff pastry — a lost art in most patisseries — he serves sweet and savory crepes and buxom sandwiches on crusty, housebaked baguettes. Quiches and croque monsieur round out the menu. This winter Remillieux, a former Los Alamos National Laboratory physicist, brings back his popular cassoulet, which has newfound fans singing his praises. Mille’s version boasts confit duck legs, Toulouse sausages, pork belly, and rendered pork rind. (Remember, a bulky sweater can hide a multitude of calorie sins.) Skiers who have taken turns in Europe will be familiar with the famous raclette, which is served in virtually every ski chalet. Mille serves this traditional dish, in which fragrant raclette cheese is broiled to a heavenly runny, gooey consistency, with the requisite sausage, potatoes, pickles, and vegetables for enrobing in the yummy fromage. Don’t miss the gussied-up version of potatoes au gratin in the tartiflette — a dish hailing from the French Alps with potatoes, reblochon cheese, lardons, and onions — and enjoy it with a glass of Vin de Savoie for a perfect pairing. The cozy outdoor patio has been winterized, so you can enjoy the midafternoon sun as you dine. This place is certainly one in a Mille!
