If you’d like your ski itinerary to include a high-end, classy Santa Fe resort, the newly relaunched Bishop’s Lodge gets my vote. New chef Pablo Peñalosa, who joined the resort six months after it opened in July 2021, has overhauled and simplified the menu served in the elegant SkyFire dining room. He’s also given it his personal touch. Peñalosa, who hails from Mexico City, calls upon his heritage in bar and dining room dishes such as empanadas, street corn equites, tostadas, and aguachile (shrimp with chile, lime juice, salt, cilantro, cucumber, and onion). He offers these homey dishes alongside such gourmet goodies as lamb shanks with lamb demi-glace and sweet potato purée, dryaged Wagyu beef with Chimayó chile and yellow pepper purée, and risotto with Hatch green and poblano chile. It’s probably best to share the whopping 31-ounce tomahawk steak with chimichurri with your skiing partner. Knowing New Mexico is a winter wonderland, the resort has created ski enthusiast packages that includes such tempting features as a full-day ski pass, lessons with a pro, post-ski s’mores and beverages by the fire, and an après-ski chocolate and chile tasting on SkyFire’s patio.
