CHICKEN ENCHILADAS
(SERVES 6-8)
Lightly coat the bottom of an oven-safe 9x12-inch baking dish with your choice of sauce. Cover the sauce with a layer of tortillas.Top with a layer shredded chicken — I like to use a rotisserie chicken pulled from the bones and shredded. Top the chicken with shredded cheese, more sauce and tortillas. Repeat two or three more times. The top layer should be tortillas covered with sauce and cheese. Place in a preheated 350-degree oven and bake until bubbly and slightly browned.
Calabacitas (sautéed zucchini squash, onions, garlic and corn) can replace the chicken for a delicious vegetarian option. Almost anything you like to eat can be incorporated into this recipe. Use your creativity to create a signature enchilada!
