CORN TORTILLAS
(MAKES ABOUT 18-24)
• 2 ½ cups masa harina
• 2 tsp vegetable oil
• 1 tsp salt
• Warm water as needed
Combine masa harina, oil and salt in a large bowl. Add about 1 cup of warm water and mix thoroughly. The consistency should be like very soft clay.
Using a tortilla press lined with plastic (a ziplock bag cut to line the press is my preferred technique), place a 1-ounce ball of dough (about 1 ½ to 2 tablespoons) in the center of the press and press until ⅛- inch thick. Carefully remove the plastic and place tortilla in a preheated, cast-iron pan over medium high heat.
Cook for about 75 seconds, or until there are a few brown spots on the tortilla. Turn over and cook for another 45 seconds.
Place finished tortillas in a covered container to keep them warm and moist.
